Vegan Chipotle Chili

Prep time: 20 minutes

Cooking Time: 6-8 Hours

Yield:8-10 servings

Ingredients:

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 2 carrots, grated or sliced thin
  • 1 1/2 cup corn
  • 1 zucchini, diced
  • 1 can kidney beans
  • 1 can black beans
  • 1 cup quinoa
  • 2 15 ounce cans diced tomatoes
  • 1/2 cup water
  • 2 tbsp chili powder
  • 2 health dashes liquid smoke
  • 1 tsp cumin
  • 1 tsp red pepper flakes
  • dash cayenne pepper
  • dash tabasco sauce
  • 2-4 canned chipotle peppers with seeds scraped out
  • 1 tbsp cocoa powder

Method:

Add all ingredients into slow cooker except cocoa and cook on low for 6-8 hours.

Stir in cocoa in the last hour.
