Zesty Beet Salad
Prep Time: 10 Minutes
Cooking Time: 45 Minutes
4 medium/ large beets
1 count of canola oil
1/4 Cup crumbled Goat or Fetta Cheese
1/4 cup chopped walnuts
1 bag bitter Greens or arugula
Organic raspberry Vinaigrette (pre made)
Preheat oven to 400
1. Place Beets in aluminum foil and drizzle with oil.
2. Seal foil and place on baking sheet.
3. Bake for 45 minutes or until tender.
4. Let beets cool. Peel skins and chop into bite size pieces.
Toss together Beets, Greens, Cheese and walnuts.
Plate and drizzle with vinaigrette.
Serve with a bold whole grain bread.
